Surrounded by 45,000 acres of open space with the grandeur of the Flatirons rock formation as a backdrop, Boulder, Colorado has come a long way since its early days as a bustling mining town. Today, the city is known for its hip, healthy vibe as well as upscale and historic hotels, trendsetting retail shops and boutiques as well as an abundance of casual and fine dining restaurants. In fact, Boulder is not your typical hometown, making it the perfect luxury weekend getaway destination.
Here are some of my top recommendations for where to stay, eat and play in Boulder.
There are two great upscale hotels in town: The modern St. Julien Hotel & Spa and the historic Hotel Boulderado. Both are great choices with different themes and ambiance.
• For a romantic dinner out, the Flagstaff House, perched overlooking the city is the perfect blend of atmosphere, impeccable service and fantastic cuisine. My other recommendations would include SALT, the Bistro (try the Tuscan bean dish), the afternoon tea at the St. Julien Hotel & Spa as well as Spruce Farm & Fish in the Hotel Boulderado.
• The Pearl Street Mall, both east and west now has more than 1,000 businesses, many of which are unique, quirky and locally owned. One of these, Piece, Love and Chocolate has some of the best hot sipping chocolates (loved the salted caramel) you will find in these parts.
• For activities, try a hike at the Chautaqua National Historic Landmark at the base of the majestic Flatiron rock formations. Other popular attractions include the nearby Leanin Tree Museum of Western Art and Celestial Seasonings.
• A local paper once called Boulder the little town nestled between the mountains and reality. With its offbeat personality, extravagant accommodations and restaurants, your weekend here will be a truly memorable one.
